Chef Eric Lanlard tips to improve your baking
In the midst of the holidays, it’s basically a baking frenzy. And who can’t use some tips to improve our cakes and pies?
We may not have heard of Eric Lanlard much stateside, but I’m sure that will change. He has some amazing tips to “tart up” your baked goods:
- Always sift flour before using for a lighter pastry.
- Add baking powder to self-rising flour if over a month or so old. It might be “dead.”
- Always gauge your oven with a cooking thermometer because they are often off.
- Roast nuts or coconut for more flavor.

Oh I might have to check that book out. Especially if it has lots of great tips that will save me from ruined desserts!
The oven temp tip is crucial! I swear my ovens have always been a few degrees off. I always burn cookies. 🙁
